Cupcake Tin Breakfast

Potato Omelet - Makes 12
36 tator tots
1/2 C. diced ham
1/2 C. diced bell peppers
7 eggs
1/4 C. Milk
1/4 C. Cheese
salt and pepper

Place in Cupcake tin:
-3 tator tots per spot
Bake 10 min at 400
-Top w/ diced ham and peppers
- Add wisked eggs to almost the top
- Sprinkle with cheese
- Bake 20 min at 350

Ham Cups - Makes 12
6 eggs
milk
cheese
onions and peppers diced
green onions
ham slices
salt and pepper

- Saute onions and peppers
-Line tin with a slice of ham in each tin
-Add peppers and onions
-Top with cheese
- Pour in egg mixture
-Top with diced green onion
- Bake 20 min at 350

Pumpkin muffins
1 small can pumpkin
1 box yellow cake mx
mix together
Bake at 350 for 20 minutes for regular muffin size

Pancake muffins
Mix up pancake mix
Fill muffin tin 3/4 full
Bake 10 min at 350

Syrup
1 C Water
1 C Sugar
1 tsp maple extract

Bring water and sugar to a slow boil over low heat.
Remove before full boil
Stir in maple extract
